After the Spanish-inspired Yuletide Celebration in 2017, inspired by the greens, Park Hotel Alexandra celebrating Christmas 2018 with The Carvery’s Festive Forest Feast. Endow with harvest of garden ingredients including roots vegetables, herbs, truffle and mushroom and various poultry and meat.
The Carvery’s Festive Forest Feast
The Carvery is fame for their Roast, be it Beef, Chicken or Pork. It is a carnivore heaven with eat-all-you-can. At every festive, Executive Chef Ian and his team will prepare an array of Festive Roast with a handful of new items together with hand-picked complimenting sides. This year at The Carvery’s Festive Forest Feast is no exception.
Festive Roast
Since Roast is the always the emphasis at The Carvery, we begin by examining these galore meat.
Whiskey-aged US Agnus Beef Prime Ribs making its debut at The Carvery’s Festive Forest Feast. Tenderized and marinated dry-aged prime rib with cloth soaked bourbon. This toothsome cut is only available at weekend dinner.
Roast Chicken is yet another staple at The Carvery. At the Forsest Festive Feast, Christmas, it features the Spit-roasted Chicken with Truffle, another new item. First brine the chicken, next roast it and slather the Chicken with truffle butter. As always, this tasty bird is not only available at the buffet table but also for takeaway.
Dingey Dell Pork Rack is another new item. This is available for weekend dinner only. Brine with Chef’s secret recipe and rubbed with an array of herbs.
Or dig in to the crowd favourite, Beef Wellington available only on Christmas Eve and Christmas Day. With a layer of mushroom between the pastry and beef complimenting each the ingredients.
Complimenting Sides
At The Carvery, diners don’t have to worry about disappointing sides. Every sides are carefully decided to pair with the Roasts.
Begin with Seafood on ice with Canandian Mussel, Chilled Tiger Prawn, Fresh Oyster and Snow Crab. We can’t help but kept refilling our plate with more Snow Crab.
At every buffet, soup is always made available. The Pumpkin Soup with Chestnut and Spanner Crab was available on the day of our visit. This is extremely delicious. Every element in the soup was on point.
For Salad, Smoked Duck, Orange Cous Cous & Cranberries and Persimmon, Endive and Pecan Nut.
More sides, with Glazed Baby Carrot and Purple Mashed Potato.

The Seafood Nantua was too good to be missed. Once the lid was lifted, the smell of the sea enticed the senses.
Desserts
At a corner, is a table of desserts to end the meal.
Another highlight at The Carvery’s Festive Forest Feast is the Raspberry and Lychee Trifle. Leave some stomach space for the Trifle whenever you are at The Carvery. It is not to be missed.
The other dessert that I love is the Orange and Ginger Jelly, citrus fragrance with light ginger spice was refreshing to the palate.
Other available desserts were the Lemon Merinuge Tart, Bakewell Tart and Spiced Chocolate Pots and Creme.
