First Culinary Special Black Garlic Set Menu was launched recently. A 6-course set with 4 dishes consist of the nutritious Black Garlic. Some might wonder how do we get Black Garlic. The answer is simply ferment Garlic for about 40 days. After this natural process, the pungent garlicky taste and smell vanished. Instead, there is a smooth nutty flavour with lightly sweetness and sourness. Besides the amino acid in White Garlic, it consists of double the amount of antioxidant when compared to its original form.
It wasn’t my first visit to First Culinary Restaurant at Ang Mo Kio. Located within the ground of ITE College Central. It isn’t the most convenient location. Nevertheless, still pretty accessible with nearest MRT station being Yio Chu Kang station.
First Culinary Special Black Garlic Set Menu
First out of the 6 dishes is the Black Garlic Honey Pork with King Prawn Tossed with Salted Egg Yolk 黑蒜炭叉烧拼咸香虾球. This dish scored well with all diners. There was nothing I dislike about this dish. Crispy caramelised honey enhanced by the black garlic. While the salted egg was the savoury version with perfection of recipe.
For someone who avoid soup finish the entire bowl of Double-Boiled Black Chicken Soup with Black Garlic and “Sheng Di” 雙黑金藥膳滋補汤, you know it is a resounding confirmation of how superb it was. Absent of herbal taste, rather, it was sweetish with a woody flavour note.
Steamed Cod Fillet with Minced Black Garlic and Chili Soya Sauce 辣味黑蒜茸蒸鳕鱼扒 was the crowd-favourite. Black Garlic. complement well with the oily Cod Fish; it was a pity that the fillet wasn’t a fresh but frozen one.
Next is the only dish without Black Garlic, the Braised Whole Abalone with Home Made Bean Curd in Oyster Sauce 原只鲍鱼扒自制豆腐. Lightly chewy and yet flavourful abalone while the home-made bean curd was silky and tasty too.
Finally, filled up the stomach with Stir-Fried Angel Hair Pasta with Scallop and Minced Black Garlic in White Truffle 白松露油带子黑蒜天使麵. My least favourite among the 5 savoury dishes. Overall it was bland; lacking of both black garlic and truffle flavour. A little more salt will be preferred too.
Last course in the First Culinary Special Black Garlic Set Menu is the First Culinary Dessert 食为鲜甜品双寶. Encompassed 2 desserts on a platter; chilled sweetened Cream of young coconut and Osmanthus Jelly Cake. Former was slightly milky, some diners who dislike milk, didn’t favour this. It was the coconut jelly that we relished. The latter was the preferred choice. The jelly texture was chewy, similar to the Konnayaku Jelly.
The 6-course First Culinary Special Black Garlic Set Menu is priced at $68++ per person. Memebers get it at $48++.
We think the First Culinary Special Black Garlic Set Menu is value-for-money. Tasty and the amount does filled the stomach.
