Sushi Tei, the well established Japanese restaurant chain opened a brand new restaurant on 14 June at VivoCity. They transformed the existing Sushi Tei outlet at VivoCity to this brand new concept. The restaurant is called Hokkaido-ya which translates to Hokkaido-shop, a fast casual, self-service restaurant serves Hokkaido-inspired dishes. In case, you have no idea where to locate them, they are facing the Sentosa, alongside with Thai Accent , Yole, Ben & Jerry and Soup Restaurant.

 

Diners can register themselves at the self-ordering kiosk at the entrance of the restaurant, the self-ordering kiosk uses Artificial Intelligence to recognize the face during the registration. Your ordering history as well as your personal preference are saved in the machine to personalize your dining experience.

A great appetizer, the ingredients are so fresh and colors are vibrant, it makes me instantly hungry.

It certainly live up my expectation, there were many cubes of salmon, tuna, scallops and homemad tamago. The sweet prawn was fresh, and the bowl was definitely worth the money.

Truffle Salmon Don ($10.90)

Salmon lovers would be excited at their Truffle Salmon Don. The truffle aroma is inviting, and it is a sight to be hold. Their salmon were air-flown from Norway and arrives on our shores chilled, not frozen, which makes the perfect accompaniment with the shiny rice from Niigata.

Shirobuta Pork Katsu Hokkaido White Curry Rise ($12.90)

White curry, it is a must-try on the menu, it is a variation of the ubiquitous Japanese curry in white. It is inspired by the snow-covered landscape of Hokkaido in winter. There was a crispy coat surrounding the piece of meat, when you dip it into the white curry, it gives perfect texture and fragrance to each bite.

Ebi Fried Hokkaido White Curry Udon ($12.90)

If you are a noodle person, you can give a try on their White Curry Udon with Fried prawns. The prawns are fresh, there was also enough juiciness to counter the crisp.

Hokkaido Butter Corn Hotate Ramen (Paitan broth $12.90)

Both Ramen and Hotate are imported from Hokkaido. I like the Paitan broth (white pork-based broth), it is thick, cloudy. It is full of collagens extracted from pork bone marrow and cartilage which adds body to the soup.

Hokkaido Beef Ramen (Miso broth $15.90) 

This is another popular rendition, it served with thinly-sliced Hokkaido beef, pan-fried to medium-rare doneness to retain the flavor and texture. The robust flavores of the beef and broth worth returning for.

I was a bit full and just want to have a small bite to wrap up my dinnder. Surprisingly, the ice cream is light and delicate, it goes well with various flavors – chocolate, matcha and red bean, it just adds enough brightness.

NAHMJ Verdict

 

Hokkaido-ya was a relaxing, casual and friendly place provides decent Hokkaido inspired dishes, even the most finicky diner can find something to suit his taste buds.
