Each year for Mother’s Day celebration, most of us, will start with looking for a restaurant with Mom’s favourite food. If your beloved mummy loves Chinese food, one great suggestion is Yam’s Kitchen 8-Course Mother’s Day Cordyceps-infused Set Menu.
You may not have heard about Yam’s Kitchen as it is located in the far East of Singapore. Precised location is Downtown East. This humble restaurant has award winning chef helming the kitchen, who is also the owner. Executive Chef, Founder Kelvin Yam has more than 20 years of experience. He is also the Treasurer of Singapore Huo Yow Cooks’ Association (新加坡好友厨业工会) and gourmet consultant in food and culinary. He was awarded Gold at the International Youth Chef Competition 2009 in China (2009 年荣获中国扬州第一界 “国际青年中餐厨师争霸赛”金奖) and Gold at International Chinese Culinary Competition in China Wulumuqi (2010 年中国乌鲁木齐 “国际中餐名厨邀请赛”金奖 精烹各式中西式菜肴及各式甜点) with the award-winning dish, Signature Steamed Fish Tail with Sweet Spicy Sauce.
The other signature dish is the Yam’s Kitchen Curry Fish Head. Both equally delish and has its distinct characteristics.
Yam’s Kitchen 8-Course Mother’s Day Cordyceps-infused Set Menu
Among the Yam’s Kitchen 8-Course Mother’s Day Cordyceps-infused Set Menu, there are 3 courses without cordyceps, and be rest assured, it isn’t overwhelming. In fact, the amount of cordyceps was only enough to augment the flavour. This 8-course Mother’s Day Set Menu is made possible through the collaboration of NUV Cordyceps whose cordyceps products were invented and manufactured in Singapore.
First dish is the Four Heavenly Treasures 母亲节特色四宝拼盘. Per the name suggested, there are 4 items on the platter.
Out of the 4 items, only 1 dish consists cordyceps, that’s the Cordyceps Wanton with Crab Meat. Wise to pair meat and crab, to bring out the flavours. The addition of cordyceps result in a unique aroma. Perhaps a reduction in the soya sauce would be a better bet.
Yam’s Kitchen Salted Egg Fish Skin is not only crispy, it has a good amount of salted egg fragrance and most importantly, it is savoury. I was glad it was not the sweetish rendition.
Fragrant Wine Pork Belly and Thai Style Jellyfish are 2 other items in the first course. A good portion of fats and lean meat with a perfect dose of marinate; the result was mouthwatering. While the latter, a light sourish with crunch and chewy texture whet the appetite.
Double-boiled Kampung Chicken Cordyceps Soup with Dried Scallops, Longans and Wolfberries 冬虫草干贝顿走地鸡 delights the heart of even a non-soup lover. I could savour the natural sweetness from the ingredients. Most importantly, I was glad that it wasn’t bitter at all. This dish will also be available for Ala Carte order in the month of May at $34++ (good for 6 persons) and $68++ (10 to 12 persons).
Taking a break from Cordyceps and enjoy the Crisp Prawns and Purple Sweet Potato Shoestring Fries with Lychee & Apple Mayo 紫薯荔枝鲜果虾球. The lightly fruity with well-balance sweetness coupled the deep-fried prawns. The surprise was the good amount of lychee aroma. Together with the apple crunch up the dish a few notches. Once again it whet my appetite.
Steamed Garoupa Slices in Cordyceps Stock 冬虫草高汤浸石斑件 is a creative dish. Though I find the fish slices a little over-cooked and since it was steamed with the flesh exposed, a little of the natural fish flavour was lost. It was a pity even though it was ease for consumption, I didn’t appreciate. If you prefer the Ala Carte, Yam’s Kitchen offers Steamed Silver Perch with Cordycep 冬虫草高汤浸海驯银鲈 ($48++).
Braised Cordyceps Pork Ribs in Lotus Leaf 冬虫草荷叶烩排骨 was the dish with the strongest cordyceps flavour among the dishes. The braised was flavourful and the saltiness level was perfect. My only complaint is the bitterness of the herb. This is the other dish available as Ala Carte ($24++ – medium / $48++ – large).
Braised Ten Headed Abalone with Signature Tofu and Spinach in Cordyceps Sauce 冬虫草苋菜豆腐扣十头鲍, a dish with silky homemade tofu that were deep-fried to perfection, complemented with the cordyceps sauce to flavour-up the otherwise boring beancurd.
By now, I was filled, but I still find the Longevity Ee-fu Noodles with Enoki Mushrooms and Seasonal Greens 金针什锦福寿面 tasty. This is another dish without cordyceps, followed by the desserts with none as well.
Nourishing Double-boiled Peach Resin with Red Dates 红枣皇冰糖炖桃胶 was the dessert to complete the meal.
