Garance is another One Michelin Star restaurant opened by Guillaume Muller and Guillaume Iskandar (both formerly of L’Arpège). Nestled in an old building near Invalides.
The contemporary recipes used in this restaurant tends to highlight the ingredients in the dishes. The design of the restaurant runs the contemporary theme too which is in line with the food.
I visited the restaurant on a weekday for lunch at around 1pm. It is advisable to make your reservation as my table was the last available one left. For lunch, Garance serve a 3-course meal at 42 €. There were 2 other Set Menu, Chef Surprise for selection. First is the 4 course at 70 € while 6 course at 90 €. I chose the 3-course meal.
After the order is completed, a Brioche with some spread was served. I love the pillowy texture but don’t appreciate the spread.
Followed closely was the Sushi as the Amuse Bouche. A bit size which whet the appetite. Instead of re-filling the bread with Brioche, Sourdough was offered.
For starter, there were 2 options. My choice was the Celeriac in Spaghetti, apple vinaigrette, granita aromatic herbs, smoked tuna. Due to the sourish and fruity flavour, it was appetitising. The second option is the Roasted onion and Bresoala, Albufera suace with fresh herb. Per the description, I didn’t like onion and the remaining sounds alien to me.
I opted Chicken cooked on chestnut praline potatoes, salt egg yolk for my Main Course. Though I was apprehensive about chicken as I have a gut feel that the breast meat might be served, however, I can’t resist the mention of salt egg yolk. I was right. However, as the chicken was sous vide hence the moisture retained. What impressed me more was the lightly creamy, flavoured, ultra smooth Mashed potato.
The second Main option was Fish of the day, citrus lacquered, caramelised endive, buckwheat sauce, turnips.
A choice of 2 dessert were available. As the service crew rattled off the selection, the first didn’t register with me. Therefore I opted the second which was a Chocolate dessert. Love the dessert, how I wish, I could have 2 servings.

Lunch at Garance was a fabulous experience.
