Within the same vincity in Hougang, beside the known Ciel Patisserie which has been around for a while, this area now welcome Purist Patisserie, nestled at The Promenade along Jalan Pelikat. It is heartwarming to see more and more Singaporean who are well-trained French Pastry Chef venturing into the residential dense estate rather then setting up in town.
With some walking distance from Serangoon Road and the nearest MRT station, Kovan, hence, some would lament that the venue is rather remote. Though this might be true, it might be worth exploring due to the high standard and quality of the pastries and cakes offered by Purist Patisserie.
Purist Patisserie specialises in French Entremet and so what exactly is this? French Entremet simple means French desserts or dishes serve between meals. In today term, an entremet is a multi-layered mousse cake with numerous complementary flavors and various contrasting texture.
At the small cake counter, there are a small limited selection. I counted a total of 6 cakes.
I was attracted to Pink Panther ($8) because of the rose though I am not a fan of Grapefruit. In addition, there are Pomegranate and Almond. Such combination results in a complex but yet harmony flavour blend of sweet, fruity, nuttiness, floral and even bitterness. Overall, I love it though I find it a little too candied. The first impression was the bitterness was too sharp, however, when the rest of the flavour emitted, it blend well.
Other than cakes, Purist Patisserie also offers Macaron ($5.50 for 2). Only 2 flavours were available on the day of my visit. The lemon was not sourish enough while Pistachio flavour was too light. Like the cake, it was quite saccharine. The shell was too moist with minimal chewiness. The consolation was the presence of the crispy outer.
Beverages were limited to Coffee ($5) and Gryphon Tea ($4) and Sparkling Water ($3). I will skip the Cappuccino the next time as they use Capsule (similar to the Nespresso) which with extremely light body and fragrance.
NAHMJ Verdict
Overall, Purist Patisserie which specialises in French Entrement does offer cakes of high quality and standard, however, it was a little too sweet for my palate.
