Ginza Kamo Soba Kyudaime Keisuke is the first Keisuke restaurant located in the West side of Singapore. Its perched at level 2 of a shophouse in Holland Village. Kyudaime means ninth generation in Japanese is referred the restaurant being Chef Keisuke’s ninth ramen concept. If you haven’t tried any of Keisuke Ramen, there are Pork, Chicken, Crab, Lobster and even Bak Kut Teh.

 

The restaurant offers a total of 32 seats with counter and normal dinning table option.

Chef Keisuke being a French-trained chef, offering Japanese cuisine, decided to marry Duck with Ramen due to his background. Uses on the Irish Hybrid Duck due to thick layer of fats beneath the skin which will release more aroma.

At all Keisuke Ramen Restaurant, there are variants of Clear Broth, Rich Broth and Spicy. At the Ginza Kamo Soba Kyudaime Keisuke, one will find also the Miso. And diner could customise their own bowl of ramen.

Savouring from the lightest in flavour to the richest, we started with Duck Broth Ramen (Clear Soup) Special ($19.90). Even though it is clear, the fragrance of duck were savoured. Intimidating thick layer of fats on the duck slices added to the goodness. I love the duck balls and wouldn’t mind have more. With the runny yolk in the Ajimata, the result was heavenly.

Duck Broth Ramen (Rich Broth) Special ($19.90) was next. With the exact ingredients found in the former dish, the differentiation factor was the rich broth brewed with the bones and the meat. In short, the entire essence of duck is dissolved in the soup and no doubt, this is my favourite dish at the Ginza Kamo Soba Kyudaime Keisuke.

For a change, turn to dry Ramen and opt for the Duck Maze Soba ($14.90) which is drizzled with Keisuke’s special shoyu-based sauce covered with shredded steamed duck, leek, greens and a tempura seaweed-wrapped egg. Break open this seaweed tempura to release the flowy yolk. I would suggest try it at it is and next drizzle the orange vinegar to the noodle and toss well.

Finally, the Duck Tsuke Men Special ($19.90). By the side is a bowl of enhanced rich duck soup cooked with bonito flakes for dipping the noodles.

If you aren’t a ramen fan, you may want to turn to rice. Four options are available at Ginza Kamo Soba Kyudaime Keisuke. First is the Soboro Gohan ($8.90), minced duck rice, followed by KAMO Wasabi Gohan ($8.90) and Koshihikari Rice ($3). The highlight is the Kamo Ju ($29.90), Duck On Rice which we tried. The rice is peppered with seaweed and other flavoured ingredients to augment the flavour. I love this simple-looking dish. 

 

 

NAHMJ Verdict

 

After so many creative flavours, such as Crab, Lobster, Bak Kut Teh and now Duck at Ginza Kamo Soba Kyudaime Keisuke, I can’t help but wonder, what would Chef Keisuke come up with next.

 

I am not a duck fan, however I find comfort in gurping down Duck Ramen and especially on a rainy day.
