We know that the Carvery at Park Hotel Alexandra has won the heart of many with their various roast and its complementing sides that would certainly coupled well with the Mains. They have up their game by putting team to the test with grilling meat over open fire. Presenting the Carvery’s Hearth & Heat Buffet theme with a series of BBQ meat over wood-fire.
Carvery’s Hearth & Heat
At this Carvery’s Hearth & Heat BBQ Buffet, instead of roasting the meat in the oven, the chef at the buffet line will be roasting them over open fire instead. It takes skill to get the perfect roast for such method.
After roasting over these specially selected wood, the meat will get a woody smokiness on them.
There are a total of 3 Mains presented at the Carvery’s Hearth & Heat buffet . First is the Hickory pulled pork with fried bun.
Toss the pulled pork with home-made hickory sauce. Next sandwich the well-tossed meat on the pillowy soft fried bun. Finally, topped it with some appleslaw to provide a tanginess and at the same time to counter the sweetness from the hickory sauce.
The result was the bun were such a popular item. I couldn’t stop at one.
The other 2 amazing Mains were Honey Lemon Chicken and Argentinian Beef. Both were outstanding. It really depend very much on preference. The succulent chicken was well marinated with a distinct woodiness. While the beef was easy on the jaw. Having it with one of the specially prepared sauce, elevated the flavour.
Besides fabulous Mains, a total of 5 specially curated sides to complement the meat. First is the wonderful Mesquite-grilled trout with citrus salsa. Don’t be mistaken for Salmon. It does look and taste simliar to Salmon but lacking of the strong pungent fishness flavour. The citrus salsa whet the appetite.
Next is another sides that is not only healthy but delish, Grilled octopus salad. I like the salad dressing that was on the baby spinach but the octopus was far too chewy for me.
Red wine pickled cabbage was the next. But not an item I fancy. Somehow, I didn’t enjoy the taste.
I love Grilled Vegetables as the grilling caramelises the sugar as such increases the sweetness. My favourite grilled vegetables is the Japanese Sweet Potato. With a little sea salt added, seems to make the items more slanted towards a savoury dish.
Instead of the usual Triffle, this round for dessert is the Cinnamon and vanilla pineapple. I wouldn’t associate this with dessert but as a side if I wasn’t informed.
Anyway, as it is grilled, the sweetness of the pineapple is amplified. But the sourishness does dominate.
Finally, as always, I enjoy the food at The Carvery and more at the Carvery’s Hearth and Heat buffet. The woody smokiness does make a significant to the flavour.
