Once again it is Singapore Restaurant Week 2015, this round we selected Stellar At 1-Altitude as our first and Bacchanalia as the second for the week.
3-course set dinner was served at Stellar At 1-Altitude during the week. 2 choices were provided for each course. We went for 1 each so that we could try the complete menu.
It was a pity that bread wasn’t complimentary or rather served. A supplement of $10 was required.
We started with the Salmon starter. We have a good first impression.
Appertisers
Choice of Foie Gras and Tuna were the selection for Appertizer.
It was a caramelized foie gras seat on brioche with blackberry, roasted pear and a side salad. The foie gras wasn’t as tasty as some of those we have previously. We thought it could be better.
The tuna gravadiax, mustard jelly were twisted and laid on the plate nicely with beetroot meringe placed randomly. The greens added colours to the entire presentation which was attractive. I was glad that there isn’t any strong fishy flavour. When eaten together with the beetroot meringue, it enhanced the flavour. Overall, it was well executed.
Mains
Beef or fish was the available choices.
The short rib were cooked at low temperature together with bone marrow custard, port wine sauce and truffled mashed potato and grilled brussel sprouts were used to plate the dish. Flavourful, tender short rib but could be better.
Pan fried Halibut fillet sat on braised savoy cabbage, browned butter, capers with lemon air finishes on the fillet and roasted baby potatoes by the side. Fish was fresh but was somewhat the fish flavour was lost.
Desserts
Either Rose De Bain Roulade, a nougat based dessert or Strawberry Pecan Cones a cream based dessert were available.
Desserts, Rose De Bain Roulade composed of nougat coconut, raspberries and rose de bain chantilly. Early Grey Caviar and roasted Pistachios were placed on topped of the heart shaped roulade. Sweetish, sourish with lightly coconut and nutty flavour. I did enjoy but somehow thought there were still room for improvement.
The second dssert, Strawberry Pecan cones was with strawberry creme patissere wrapped by pecan kataifi and orange blossom syrup together with tiny cubes of strawberry in a row, by the edge of the plate. Overall, the crispy wrap enhanced the texture and paired well with the lightly sweetish and sourish berries creme.
NAHMJ Verdict
We certainly agreed that there are rooms for improvement at Stellar At 1-Altitude. The bonus at Stellar At 1-Altitude was the view of Singapore Marina Bay Financial Centre and around. If not for the haze, view would have been more enjoyable.
