From 3 April, Ippin Cafe is bringging a slice of Kesennuma Shishiori to this sunny shore. In this Ippin Cafe x Kesennuma Shishiori menu, expect dishes using only sustainable seafood.
Located 1 hour car ride from Tokyo, Kesennuma Shishiori is one of the world’s three largest fishing grounds. Due to its geographical location where the warm and cold water meets, large population of a good mix of varities of fishes are found there. At this fishing ground, only sustainable fishing methods are deploy in the catch to ensure healthy population is maintained.
Ippin Cafe x Kesennuma Shishiori
Ippin Cafe is offering the Classic Salted Squid Guts with Cream Cheese. Luckily, I only noticed the ingredients after I am done with the dish. Should I hear Squid Guts earlier, I am not sure if I am brave enough to face it. Surprisingly the squid guts doesn’t has the pungent seafood flavour at all. I was informed that it might be masked by the cream cheese.
Shark Meat Ball with Seaweed and Vegetable soup with Yuzu Ponzu is next. The only time I ate Shark Meat was in a local Noodle dish (Tiong Bahru Lou Mee) as fried fillet. This time, having it as a meat ball, it does feel like having fresh Fish Ball with rougher texture.
Smoked sanma roasted with garlic is a very simple dish consisting of sanma by Marutoyo Co Ltd. on a bed of green. The smoked sanma has very tiny amount of fishy flavour.
Salmon flake rice ball with Toro Konbu. The entire rice ball was lightly flavoured.
Among the rice dishes, I love Spicy Tuna hand-rolled sushi. With Mayonnaise added, the flavour was prominent.
Seared Bonito Sushi is another convenient dish. Using the Frozen Seared Bonito, sliced it and topped it on the sushi rice. With the minced ginger, it elevated the flavour.
Whenever we heard Canned Food, for us is avoid. But we were told in Japan, Canned Food is the second freshest food. Heat it up and enjoy it with Sake.
Sake
We tried 3 sake. First was the Mizutoriki Tokubetsu Junmaishu Yamadanishiki Gowarigobu, a dry sake.
Next is Daiginjo Kisho, sweeter.
Finally the Yuzu Sake, fruity and sweet which I love.
