A Night in Niigata at Tóng Lè Private Dining

Niigata City showcased their wonderful produces through the collaboration with Tong Le Private Dinning. As such “A Night in Niigata” menu with 6 dishes were presented using the finest ingredients from Niigata.

 

This prefecture sat on the west coast of Japan in the Chubu region, facing the Sea of Japan and it is also at the mouth of Japan’s longest river, the Shinano River. Getting to Niigata via the bullet train require travelling time of about 1 hour 40 minutes from Tokyo. As it is filled with fertile land and water due to its geological location therefore it could produce fresh and quality produce. Niigata is also noted for its seafood, rice, sake, ski resorts, national parks and onsen.

Using Niigata’s Specialties such Nanban Ebi (Shrimp), Rice, Sake, Le Lectier and more, Senior Executive Chef Ken Ling of Tong Le Private Dinning curated an exclusive menu “A Night in Niigata” comprises of 6 dishes.

 

This specially curated menu using the freshest produce from Niigata is available only for 2 weeks, from 14 to 30 December 2016.

 

 

Snow Crab (雪蟹)

 

The sweet and smooth Snow Crab meat marinated with 2 Chinese Win and 1 Sake and together with other ingredients brought out the best of each element. We were wow by the flavour of the and land.

Nanban Ebi (南蛮虾)

 

Velvety texture, rich sweet tasting Nanban Ebi (commonly known as Sweet Shrimp) hung on a pumpkin ring, sat in the centre of a savoury pumpkin broth with nameko mushroom and pumpkin seed. These Ebi got its nickname due to their colour and shape resembling chili pepper, “Nanban”.

Wagyu Beef (和牛)

 

Most of us are familiar with this famous product from Japan, the Wagyu Beef which needs little introduction.

Tai-Madai/Sea Bream (鲷鱼)

 

Tai-Madai, known as the “Celebration Fish” and “King of White Fish” is used to cooked this light but yet flavourful fish soup. Taro and Enokitake are added into the soup to provide more ingredients to the otherwise monotone soup.

Uonuma Rice (鱼沼市米)

 

Last savour dish in the “A Night In Niigata” Menu is nonetheless a local inspired dish, Uonuma Rice  (鱼沼市米). Niigata is fame for producing best Japanese rice. Instead of using the Thai Jasmine long grain rice, the Uonuma Rice from Niigata was employed in this Chicken Sushi Rice looking dish. The rice is lightly spiced and flavoured like the chicken rice, topped with 3 different chicken; soy, steamed and roasted.

Le Lectier Pear (新潙梨)

 

A Night of Niigata ended with a sweet note with a pear dessert, Le Lectier Pear (新澙梨). Half the pear was soaked in osmanthus and other ingredients to absorb the essence while the other half was used to make the sobert.

NAHMJ Verdict

 

We were extremely impressed with “A Night in Niigata” menu by Chef Ken Ling. He has brought the best of all ingredients in each and every dish.

 

And now, I am mesmerized by Niigata produce and will have to plan for a trip to explore their food soon.
