When I saw the name Noodle Evolution, I was wondering what kind of noodles would it be selling. The name set me curious and I was eager to find out what it is like.
The stall has noodles to offer, noodles with different ingredient. Currently, there are only Chicken Cutlet and Premium Noodles (Soup or Dry). The remaining 2 others; Garlic Mushroom Noodle and Herbal Duck Bee Hoon (Soup) will be available early next year. And it has a side dish, Mojo Crunch.
I ordered the Chicken Cutlet Noodles. I see that they used mainly Chicken Thigh, which is good. The noodles were with a little chewy and soft to the bite. There isn’t much sauces so you get the natural, original noodle taste. The soup is decent and pretty salty though.
I ordered a Mojo Crunch. It is mainly Tau Po with vegetables stuffing. The stufffing, likewise, has its natural vegetable sweetness, not much of seasoning added. The best part of this Tau Po is that it is crunchy but not oily. It taste better with the chilli sauce
I find that the food whipped up by Noodle Evolution has minimal seasoning. So if you like it that way, it will be for you. Meanwhile, I am waiting for next year to try their the two creation.

Just read your review on Noodle Evolution and noticed that you have tried their signature Mojo Crunch. I love it too..
In fact, I just visited their stall few days ago and they had published 2 brand new dishes: Herbal Duck Bee Hoon Soup and Garlic Mushroom Noodle.
